Stuffed jalapeños — Mexican appetizer made with chili peppers filled with pork mince and cheddar cheese, wrapped in bacon. Recipe with baking until done and serving with sauce.
Stuffed jalapeños are a Mexican or Tex-Mex hot appetizer (chile relleno). The jalapeños (hot peppers) are cut lengthwise, the seeds are removed (to reduce heat), filled with a mixture of pork mince and cheddar cheese, then the halves are joined together and wrapped in bacon. Baked in the oven. Served with sauce.

Cut the jalapeños (6 medium) in half lengthwise and remove the seeds. In a bowl, combine pork mince (120 g), cheddar cheese (60 g, chopped or grated), salt and pepper to taste, mix well. Place about 20 g of the filling into each jalapeño half. Join the halves together (squeezing), then wrap each stuffed half with half a slice of bacon (6 bacon slices, cut in half). Place the bacon-wrapped peppers in a preheated oven at 160 °C for 15 minutes. Serve with your favorite sauce.
